Our food system is complex and unfair. Farmers don’t get a fair price for there product and consumers are not involved and don’t have a voice in our food system. Onze Markt is a new cooperative food brand with the mission to create a fair food chain and pay farmers a fair price. Together with farmers and consumers we bring fair products to the supermarket for a fair price. Consumers can participate in decisions about the products of Onze Markt through online questionnaires. Chefke

1/3 of the dutch population has difficulty making ends meet. Therefore, healthy eating becomes difficult. There is a lack of knowledge about healthy eating, preparation and doing this on a low budget. Chefke is a meal box for families on a low budget. It offers a helping hand to families with two children from the age of four to twelve, who have little knowledge about healthy eating and preparing healthy food. Chefke is very approachable, low budget and for the novice chefkes! Healthy food is made available for everyone*, making* your worries a little less.

DITTO

My challenge during this project was: how can I get men who eat meat, 6 to 7 days a week, to eat meat from animals with a higher quality of life and reduce their meat consumption? DITTO consists of three different hybrid meat based sausages. We use vegetables as a flavor enhancing element. The extreme flavors of the sausages trigger a man. This makes him curious, he wants to buy the product because of the taste and quality of the meat. Unconsciously, he gets to know the hybrid meat product. DITTO's sausages contain meat from a small butcher's shop with its own animals.

WeiFris

Our challange is to develop a healthy and tasty dairy product from a residual flow of organic cheese whey. We created the concept of WeiFris, which is a dairy drink based on cheese whey that is fermented with kefir culture. Cheese whey is a residual product from the production of cheese and contains mainly lactose, whey proteins and water. Kefir is known for its probiotic properties. By adding these properties to cheese whey, we have developed a high quality product from a residual flow.

YENTHEE

There are many alcohol free drinks on the market, but all of them contain a lot of sugar. I wanted to create a drink that contains no alcohol or added sugar, as alternative for all those other drinks. I came up with an non-alcoholic, sparkling drink based on tea, with no added sugar, for people who won't/don't/can't drink alcohol. It is served in a nice bottle that you can 'pop' yourself for an extra experience and you pour it in a wine glass. With this drink you can toast together with your friends and/or family when they are drinking their alcohol beverage. You will not feel left out!

Gluten-free bread using residual flow

The challenge of the assignment, set by bakery company De Broodbakkers, was to develop a bakery product using a residual flow of potato production, with the aim of preventing food waste. Following market research, we developed a gluten-free bread with the residual flow of the potato production. This gluten-free bread is in line with the company's philosophy and market demand. Our gluten-free bread not only helps prevent food waste, but is also really tasty.

Floreren

Due to environmental issues, sustainability is one of our key values. Using a currently neglected source would provide a new sustainable food source: weeds. How to introduce weeds in our current diet? The solution for this problem is to take a currently neglected source, and shape it into a trendy new sustainable source of food which is packed with vitamins and minerals. The Floreren box challenges and invites people to introduce weeds in their current diet and grow them theirselves in a controlled way. Floreren: a small box, yet a big step for the environment and society.

Just a cup of tea

Very little loose tea is drunk in the Netherlands because consumers find it inconvenient and messy and it is almost not sold in Dutch supermarkets. This packaging consists of a plastic (polypropylene) tube with a spout on the side. By means of this spout, the loose tea can be poured into a tea filter in a targeted way without tea falling next to the filter. The packaging is closed by means of a transparent polypropylene seal. This makes it easy for the consumer to see how much tea is left in the pot.

When the first years students of Food Innovation get informed about the three specializations they get more confused what exactly Packaging & Design entails and what they'll learn in those three years An interactive cardgame that will take the students through the packaging chain. This will allow them to get a sneak-peak of what they'll learn during Packaging & Design. During the game they'd have to place the appropiate subjects in the correct order of the packaging chain. Furthermore their choices will have consequences and their endscore will reflect on this. This game is for 2 to 4 players.

a lot of people over 65 do not have a good idea about their protein intake. They often overestimate or underestimate this. So they do not eat the right amount of proteins and suffer from malnutrition Mapping the protein consumption of people over 65 using the photovoice method and make an estimate of the risk of a protein intake that is too low.

The future of food 3D printing

Mapping what exists and is possible for the future of food 3D printing with the focus on two innovative techniques. While doing this, we looked at production of 3D printing on a bigger scale We compared the threats of 3D printing with the opportunities. Mainly we focused on Binder Jetting and Selective Laser Sintering (SLS). Our project is in the beginning phase and further research needs to be done. Critically important are higher production rates, in order to make 3D printing a viable option in the future.

Squeezy Plantil

Vegan diets can lead to nutrient deficiencies. Many vegan dairy alternatives lack essential amino acids and vitamin B12 from a natural source. We developed a plant based alternative for yogurt for on the go with a base of red lentil protein and addition of micro algae. The Squeezy Plantil is rich in protein and vitamin B12 and a source of calcium. Micro algae are a natural source of vitamin B12, growth is sustainable and it’s possible to produce local.

If I go traveling myself, I don’t look up what I want to see, but I look up what I want to eat. I love to share my ideas with other people and see them enjoying the different foods. I want to create food tours revolved around the culture of a country. Taste your way around offers an option to new activities and to discover different restaurants and places; to try new foods there, while being affordable and providing a lot of interactions with the locals who have a knowledge about the city and its dishes.

Winepaper

At least 20% of the grapes ends up as waste after winemaking. To make use out of the waste I took the opportunity to make paper from the left-over grapes, stems, and seeds! The solution is a wine label made from 85% grape skins, stems, and seeds!

The freshbox of the future

The general vegetable consumption is too low. On the other hand the use of freshboxes is becoming more popular. The challenge is to increase the vegetable consumption by optimizing the fresh boxes. The ultimate goal is to create a freshbox that better suits the needs of non-buyers. At the same time it is important to keep the current buyers interested. This is investigated by means of a questionaire. The results of the consumer research are converted into practical advices. If this advice is applied, the buyer shares and vegetable consumption will be enlarged.

GOOD FOOD MOOD

Mental health among young adults is a major problem. In the first quarter of 2021, no fewer than a quarter were psychologically unhealthy, according to CBS. Various studies have shown a relationship between certain foods and a decrease in depressive symptoms. One third of my research group says they eat unhealthier since Corona. That is why I have developed an educational app that offers young adults support in the field of nutrition, lifestyle and social contact. The focus is on which foods to add to your diet, rather than which ones not to eat.

I want all people to feel good, positive and cheerfully. Partly because of the Corona crisis, I notice that young people sometimes are a bit sad and no longer cheerful. I want to change this! Happilly is a concept that is meant to be given as a gift package to someone who is a bit sad or who could use some happiness or positivity. The concept consists candies in pill shape. These 'pills' ensure that you experience 100% happiness. Of course there are no real active ingredients in the pill, but the Happilly concept will give you a smile on your face and make your day a bit happier!

Intueat

Diet culture promotes an unhealthy lifestyle and feelings of regret after enjoying a meal, which could lead to subclinical eating disorders. Often associated with women, but equally common in men. To combat the negative influences of the existing Diet culture I developed an app called ''Intueat''. The app focusses on restoring a good relationship with food while also subtely teaching it's users how to eat more healthy, intuitive eating is at the centre of attention here.

An on TVP based modelproduct (burger)

It is yet unknown what recipe delivers a burger based on TVP's of soy, fava bean or pea which is measurable for detecting sensorial defects. I developed a modelproduct in form of a burger in which TVP's are exchangeable and by which the burger remains measurable in order to eliminate sensorial defects. Any TVP fits in this burger. However, the main focus was on TVP's of fava bean, pea and soy.

A lot of restaurants in Venlo aren't aware of important changes that have to be made to stay topical. According to citizens of the city these restaurants and cafés are old fashioned. With my passion for food and the catering industry I can help restaurant/café/hotel owners with making the most out of their companies and giving their customers the best experience possible. Bio-purification of Oat and Almond protein isolates

With only 24 hours left on the clock, I still had no subject. I experienced a lot of stress. Then I thought, this is it! A stress reducing food concept will be the topic for my individual assignment. Based on my research I have developed a new stress reducing food concept, namely Stresskip. Stresskip is sparkling water with a taste and added herbs that contribute to relaxation. Stresskip is an accessible concept for anyone who experiences stress and needs a moment to relax. The water is packed in a designed can and will be sold in the supermarket.

Ghana's first Superhero: the Black Soldier Fly

Due to a rising population and growing economy in Ghana there is a growing feed demand, increase in food waste production and large scale unemployment, especially in youth. The insect cluster is a collaboration between (inter)national companies, knowledge institutions and governments working together to create a startup culture by rearing BSF in Ghana. This business provides opportunity for young entrepreneurs to create economic growth, employment and reduce food waste. The BSF is high in protein which makes it ideal as a sustainable feed source for poultry and fish.

HAS Food Waste Challenge

’To visualize the ingoing and outgoing food streams, identify the biggest issues and to find solutions on how the HAS can reduce, upcycle or prevent the food waste with 50 percent by 2025 A way to reduce the caterings food waste is to make an inventory of the products that are thrown away. The second recommendation is aimed at starting a campaign on the HAS. Finally, it is recommended to have a public refrigerator or a public space in a central location in the HAS.

Drying process for bananas

Our challenge was to decrease the waste of Matooke bananas that are a staple food in multiple countries in Africa including Uganda As a solution, we have developed two drying processes: an oven drying process and a drum drying process. This way the bananas can be processed into a longer lasting banana powder to reduce food waste.

Flex Borrel Snacks

When I started this project I was not happy with the current range of snacks (borrelhapjes) for social gatherings in the supermarket. I missed meat replacement snacks that I could buy ready-made. Flex Borrel Snacks has been designed so that the range within the snack/tapas shelf in the supermarket is broadened with more options for flexitarians. A replacement has been made for the well-known 'grillworst', and also for the well-known chicken satay. Flex Borrel Snacks is the solution for flexitarians who wish to enjoy delicious meat replacement snacks during social gatherings.

Every year, more than 855 billion multi-layered sachets are produced worldwide. This number will only increase in the coming years. These sachets are difficult to recycle and easily end up in nature. Meet Bag2Dose. The recyclable multi-serving packaging for powdered foods, consisting of a PE mono-material pouch inside a cardboard packaging. The pouch will be left unprinted for optimal recyclability. The PE cap on top is designed to measure portions. Analysis of countries for Dutch feed export to Central American and Caribbean markets.

Finding ways of enabling Koudijs to supply their high-quality feed and services to various animal product supply chain actors in future foreign markets. The size and economic potential of certain foreign markets in the region are sufficient in order for Koudijs to target those. Positioning oneself as a successful animal feed supplier in Central America and the Caribbean can be achieved in Panama and Guatemala in the next five years. By targeting gaps in supply chains and building strong connections with customers, successful trade can take place.

The Veggie Donut

Research by UNICEF has shown that 93% of children do not eat enough fruit and vegetables. My goal is to develop a healthy snack for young adults which contains fruits and vegetables. I have developed the "Veggie donut", this donut is different from current donuts because it contains at least 40% fruits and vegetables and has less sugar, salt and fat in it. Next to this, it looks just like a regular donut which you can eat in the afternoon. Altogether, this is a good alternative for children and young adults who want to snack more healthily.

Plantbased milk alternatives are often not as sustainable as they seem, almonds need a lot of water to grow and soy causes deforestation. We live in a world in which sustainable food is becoming increasingly important. In what way can we increase the value of plants from nature, to give them life in the Dutch vegetable sector? The Fiddlehead Federation is teaming up with food forests and Michelin restaurants to grow the fiddleheads of the Ostrich Fern (Matteuccia Struthiopteris) locally and through a more sustainable agricultural system. This gives the fern, which has been producing these fiddleheads for millions of years, an added value within the exclusive vegetable sector.

Revalidation of CCPs and OPRPs

A revalidation of CCPs and OPRPs (control points in the process that pose a risk for food safety) of the HACCP system must be performed, because data is missing and/or incomplete. A validation report has been drawn up and developed for each checkpoint. This report gathers evidence to demonstrate that the HACCP system is actually suitable for controlling the specific hazards for the product and the production process. Fit for the future: Feasibility study of GreenPark ehf Austurland Iceland

The average Dutch consumer takes only 50% of the RDA for vegetables. Vegetable consumption is important for the prevention and treatment of cardiovascular disease and cancer. The challenge in our project is to develop/improve a foolproof dosage system within the budget for the addition of dry raw materials in a feed factory that produces taste enhancers. We have written an advisory report with multiple improvement proposals. The report includes training modules, operating system adjustments and procedure changes. Skincare, which information is correct? Skin health is also influenced by our lifestyle and diet, not just only through the use of creams. FOOD FOR FACE is a concept that shares reliable (scientific) information. The concept is further supported by an edible product: the probiotic flavour powder, that can be used as a seasoning in the daily diet (for example, dissolving it in a glass of water, mixing it with a vegetable yogurt, scattering it on something, etc.).

Children consume almost 80% too many free sugars, most of which come from soft drinks and fruit juices. in addition, children do not meet their daily recommended water requirements SLOK is a concept that responds to the water needs of children aged 4-8 years and the unhealthy drinks on offer. Validation of a novel mechanistic residual product moisture prediction (employing the Van 't Hoff equation and a GAB model) on an OMVE Spray Dryer. We compared the prediction with experimental observations by means of lineair regression modeling and Monte Carlo simulation. Major21 is a startup company in personalized sports nutrition. The challenge within this project is to figure out relevant laws and regulations and a quality system that they can start implementing. The solution we came up with for this project was to deliver an advisory report to the company to help them navigate the food industry's quality domain. The advisory report consists of findings on legislation and quality standards, including the FSSC22000 'Development Program'. Besides, there is advice on recognitions to apply for and other tools to help the company in the future.

Project ZeeWit

The goal of Project ZeeWit is to develop a method for protein extraction from seaweed, to be used in meat substitutes as a more sustainable alternative to, for example, soy protein from Brazil. First, I selected a seaweed with a high protein content, that can sustainably be cultivated here, in the North Sea. After which, I developed an extraction method for the protein. This method is based on an enzymatic pre-treatment, to break down the tough seaweed cells. After the protein is released, it is extracted through solubility properties.

At the end of every production run, residual pallets remain. These residual pallets are stacked into full pallets. Our challenge is to reduce the annual costs for the stacking process. It turned out that many residual pallets are created unnecessarily at the logistics service provider. This is because the best before date changes when production passes midnight. By giving the whole production batch the same best before date as the first produced product, one restocking step is not necessary anymore. As a result, costs can be reduced.

Samen genieten, Samen zijn is a creative card game that the elderly can give their own spin on. The front of the deck has been redesigned into a typical Dutch variant. Using the enclosed markers, any game can be played on the empty back of the cards. A bonbon recipe is published every month, so that the elderly can make fun memories together.
